Eat a Rainbow

They say eat as many coloured fruit and veg as possible for a balanced diet.
For my Child Nutrition course I had to post a photo of a "colourfull" starter recipe.

I thought this looked colourfull !

Certainly does, though I think salads always do look appetising. )t'

On the subject of healthy eating for kids I have been trying some experiments at the toddler group that I run.

Because drinks are a big issue at the moment - Squash and fruit juice have lots of sugar -bad for teeth and empty calories, or artificial sweetners- not good if avoidable. I have been making cold versions of infusions.

I use a caffetiere and put in the ingredients, cover with boiling water to extract the flavours and then top up with cold water to cool. dilute for use with more cold water.
Makes a cafetiere of concentrate and then serves up to 20 kids. No added sugars , colours or additives, no empty calories. Very frugal, costs pennies. Kids who don't want plain water love these.

For grown ups use hot full strength as herbal teas.

5 Examples

2 teaspoons Fennel Seed.

Handfull of Mint leaves.

Ginger root and lemon peel.

Tangerine peel and Cinnamon.

Handfull of peppermint leaves.



Just to think, 300 years ago a woman of my age feeding kids with herbal prepeations might have been in trouble )reap(

We keep a jug of water in the fridge with cucumber and mint in it - the children all choose that for preference at the moment.
