i read somewhere about how the shell comes off easer on new or old eggs .....or was it hot or cold eggs

If you hard boil a new egg
The shell is harder to get off
It breaks the egg up!
If your having a boiled egg (with soldiers) or a fried egg fresh is good!
If you want a hard boiled egg use an older egg
Does that sound right??

If you peel an egg under running water it's a bit easier.
Same goes for onions believe it or not.

if you are going to hard boil wait for the egg
to be about 3 -4 days old they peel better

When I have dippy eggs I always run cold water into the pan after I've tipped the boilng water out, then tip the cold out. First it cools the egg enough to touch it and get the shell off, without making cool inside, and secondly nearly every time the shell comes off dead easy.
Hard boiled eggs I leave in cold water for about 15 mins and the shell usually comes off OK, but don't use too fresh eggs or old ones

My mum always said shock the eggs by plunging them straight into cold water after they have been boiled, but I don't think we had fresh eggs, just the ones from the shop.

Old eggs definately, new ones fall apart unless you boil them for ages. New eggs tend to be rubbish for poaching as well in my experience as they break up in the pan
