Spelt bread
Spelt breadI though I would try out wholemeal spelt flour. The first loaf that I mad was OK but a little bit too dense for my taste. I used the recipe on the side of the flour bag.
This loaf I was very happy with. It is made with half spelt and half ordinary white plain flour. Much lighter and kept for a good 3 days. With the addition of a little olive oil it kept for a good 3 days. I actually prefer it to ordinary wheat wholemeal. Of course if you are going wheat free then no good for you as the plain flour is wheat. I am now a widow and live with my memories.
Re: Spelt breadRecipes using only wholemeal flour will be heavy and it is recomended that you add a quater teaspoon of vitamin C powder to the mix to aid rising. Most easy bake yeast has Vit C added to it but it still needs the extra vit C added to stop the loaf being heavy.
I use a little vitamin C powder in all my brown loaves as it allows more air in making the end result lighter Dom Ali Woks My World

Re: Spelt breadRe Vitamin C powder;- it used to be sold in chemists but apparently they don't sell it as much now as people who use illicit substances use it as an additive but not in bread.
Even plain unflavoured Vit C tablets with no other additives are hard to find for the same reason but if you can find them they can be crushed and added. Don't try it with the flavoured Vit C tablets unless you like orange etc. flavoured bread. I know Lakeland sell small pots of it and it goes a long way Dom Ali Woks My World
