For tea tonight we had the last of our NYD chicken, which was bought for Christmas in case OH was too sick to go to my middle son's for a meal. With the cold meat, we had goose fat roast potatoes, finally found out the best way to cook them, but they were the last of the bag, and swede. We started with chicken soup from the carcas, and ended with a chocolate eclair, because today was shopping day. Our meals are fairly basic, and I do not like cooking one little bit. Or the day before...... Or anything that I have in the fridge similar to the above. Mainly vegetables, some eggs, some cheese, the odd veggie burger or sausage, Quorn or LMac. Love my food, but don't like spending time in the kitchen, has to be straight from fridge to plate, or cooked within 5 or 6 minutes, preferably in one pan, hate washing up. Re: What's for dinner tonight?My main meal today will be broccoli and cheese soup made from the stem of the broccoli, we ate the florets with Sunday lunch. I'm also making a batch of piri piri chicken with rice for DH as he is working until 9:45 tonight.

I cooked extra potatoes & veg yesterday so will probably microwave a bowlful then top with cheese. And I'm working my way through the kilo of stewed greengage that I defrosted, I have a tub of crumble crumbs in the fridge so 3 mins in the microwave and there's a pudding for 1. Re: What's for dinner tonight?I just peeled the broccoli stem chopped it up and cooked it with some onion and potato, blitzed it and then added grated cheese I have used cauliflower stem the same way.

Re: What's for dinner tonight?Beef stew with mushrooms, sliced carrot, diced onion and celery in the slow cooker - then rough chopped potato was microwaved and added to the stew with some gravy granules to thicken and left to cook for another half hour on full heat .... very nice. Got plenty left over for tomorrow

That will go into 3 or 4 meals (microwaved). And a ramekin of veg from other meals - sweetcorn, peas, celery, tomato with a spoonful of braised beef- in the microwave for 3 mins. I'm not a vegetarian but a little meat goes a long way - the only time I cook joints, chops etc. is if I'm cooking for others, then the leftovers freeze and last ages.
