Help - B day cake for Teenager!

My lad turns 16 tomorrow and I want to bake him a cake. I'm not good at cakes. So any nice EASY recipes out there? He loves chocolate and fudge brownies etc . I've got some dark chocolate and cocoa and lots of fresh eggs.

If you want to make a chocolate cake this is one I make regularly...make s a lovely moist cake.

Ingredients

175 g butter, softened

1 cup sugar

3 eggs

3 tablespoons cocoa

1/2 cup boiling water

2 cups Edmonds plain baking flour

1 teaspoon Edmonds baking powder ..obviously you can't get edmonds bakin gpowder but I don't think that matters...and I add 2 teaspoons of baking powder.

Method

Cream butter and sugar until light and fluffy

Add eggs one at a time, beating well after each addition

Dissolve cocoa in the boiling water

Sift flour and baking powder together

Add to creamed mixture alternately with cocoa mixture

Pour mixture into a greased and lined 22 cm round cake tin

Bake at 180°C for 45-50 minutes or until cake springs back when lightly touched

Leave in tin for 10 minutes before turning out onto a cooling rack

When cold ice with Chocolate Icing or dust with icing sugar if desired

Or you could make the chocolate into a ganache and cover the cake with that ...This is an easy ganache

All you need then is to add whatever filling you like.

This cake freezes really well too )t'

Hope so...we have it quite a lot (in fact I've got one in the freezer now)...let me know how you get on...be interesting to know what you think of it.

YUMMY! He really loved it. I'd never made a ganache so I was pleased how nice it came out. Didn't even get a pick before it was devoured )t' I'll def make it again. Thank you so much!
