What to do with leftover mincemeat

Hi, I still have got a bit of mincemeat left over from Christmas sitting in my fridge, has any one got any ideas what to do with it besides make them into mince pies.

I make a pastry case, spread the mincemeat over, cover with a sponge mix and bake .. Lovely served with custard. )t'

or as Jannie said but with an almond topping, frangipane )c+

Or in a bread and butter pudding, spread on the bread like jam.

Is the jar open? if not it will keep to next year

How about trying mincemeat muffins. I havent made them this year, but they were really enjoiyed last year.

1 CUP PLAIN FLOUR
1 CUP WHOLE WHEAT FLOUR
1tsp BAKING POWDER
1tsp BAKING SODA
Self raising can be used either mixed as above or just white. Omit the baking powder and soda if using SR
1/4 CUP GRANULATED SUGAR
1/2tsp SALT
1/2tsp CINNAMON
1 EGG
1/4 CUP COOKING OIL not olive oil
1 CUP MINCEMEAT
1/2 CUP MILK OR FRUIT JUICE

Measure first 7 ingrediends into a large bowl and make a well in centre.
In another bowl, beat egg until frothy. Mix in oil, mincemeat and milk and pour into the well. Stir gently but do not beat. Batter will be lumpy. Fill greased muffin tins 3/4 full and bake in oven 200C or 400F for 20 to 25mims. Remove from pan and can be eaten warm.

Just watching a Nigel Slater I'd video-d, and he makes little patties.

He doesn't give quantities but for around 1/2 lb mm, he added two eggs, two heaped tblsp flour and grated clementine skin, and mixed then stirred in two beaten whites, and divided it into flat patties in a heavy frying pan of butter on a low heat. Flip half way through, and are cooked when they are springy to touch. Serve with brandy butter or creme fraiche, plus port or madeira to drink.

Thank you for all the interesting recipes, Im deffo going to be trying a few,I actually made some flap jacks with some of mincemeat,and that was delicious, and I have got a bit left over so may try Mandas ice cream recipe next as it can accompany the flap jacks.
Have written down the other recipes and will be compiling a recipe section on the PC this year, and wont be stuck next year for any leftover ideas,thanks again )t' )t'
