Homemade cheesecake

I beat 2 tubs of marscapone cheese with "some" icing sugar (ie- stick some in, beat, taste, repeat until nice) then stirred in chopped strawberries. Bashed up a small pack of plain digestives, added "some" melted butter (ie- add a bit at a time, mix together really well, repeat until crumbs stick together when pressed with back of spoon) Put biscuits in loose bottom tin, press down well, spoon over cheese mix and smooth out.
Can't wait to get into it after tea tonight )t'

A fancy cheesecake in pesky tescys costs about £4. I reckon mine comes in about the same - £2 for strawberries (bought from local greengrocer so only bought what I needed not a whole lot) cheese was 50 per tub in the bum patting shop, dad bought the biccies and butter was already in the fridge - and it was 80p in reduced to clear.
OH is a cheesecake-a-holic. One day he bought a wee individual one and I looked at the ingredient list. It genuinely scared me.

I love cheesecake and this sounds so easy peasy to make, it would be a shame not to give it a go. )t'

Next time you're in a shop lift one of the individual ready-made cheesecakes and have a look at the ingredient list. It really is scary - especially when all you need is cheese, sugar, biscuits and butter!!
Wish I could afford to stay at home all the time, I could make so much more from scratch

my mother used to make hers with philadelphia and mascarpone and when she wanted to be naughty but good, cottage cheese passed through a sieve with philadelphia.
I've never made it myself, but now you've been an example, I'm going to have to try it ;)

:oops: one cheese cake(mascapone & soft cheese mix) in the fridge minus a good sized wedge. I daren't count the calories ... but even with just a dollop of vanilla essence it is truly wicked.
